For our first article we are proud to feature Chef Jose Luis Chavez and his wonderful New York City restaurant, Mission Ceviche.

Chef Jose Luis Chavez

Chef Jose Luis Chavez is renowned for his expertise in crafting exquisite ceviche dishes. Born with an inherent passion for the culinary arts, Chef Chavez's journey began in the vibrant city of Lima, Peru. Surrounded by the rich culinary heritage of his country, he developed a deep appreciation for traditional Peruvian flavors and ingredients from a young age.

Fueled by his desire to share his love for Peruvian cuisine with the world, Chef Chavez embarked on a culinary odyssey that took him to various kitchens across Peru. He honed his skills under the guidance of esteemed chefs, mastering the art of preparing ceviche, a dish deeply ingrained in the Peruvian culinary tradition.

Chef Chavez's dedication and talent eventually caught the attention of gastronomy enthusiasts, leading him to venture beyond Peru's borders and to the culinary melting pot of New York City. In 2015, Chef Chavez founded Mission Ceviche and introduced a new wave of ceviche, infusing it with innovative flavors and modern twists while still honoring its traditional roots. His relentless pursuit of perfection and unwavering passion for Peruvian flavors have firmly established him as one of the foremost ambassadors of Peruvian gastronomy in the United States and beyond.
